When you think of Vietnamese cooking you probably think of rice paper rolls, bowls of hot pho, but there is so much more to be discovered.
The roots of all Vietnamese cooking lie in the rice fields and the tradition of each region in preparing and preserving the rice.

The Versatility of  Rice

Bahn cuon and bahn ceo, two very different type of rice pancake show how two different regions developed rice flours to create two very traditional and delicious dishes. Rice is so cleverly used in Vietnamese cooking and its original form is transformed into very delicate rice crepes, pancakes, dumplings and rice noodles…every meal will contain rice though it may not look like its original form!

For the more adventurous and with some practice, the pancakes and dumplings are very satisfying to make and will become a dinner party favourite.For the beginners there are simpler versions of both these which will still delight and make an impressive presentation.

I first traveled to Vietnam in a quest to learn about Vietnamese Cooking and I was amazed with what I found on my first visit…the freshness, the quality, the flavours and the variety of food across the country, I have been back many times now to refine and broaden my Vietnamese cooking skills and to pick up interesting ingredients and every time I find another dish demonstrating the versatility of rice and the talent of the Vietnamese people.
